The Campus House staff is happy to
(finally!) welcome spring back to Western New York and spring breakers back to campus with lunch
specials sure to inspire warm thoughts.
***The weekly soup feature is Black
Bean Soup with sour cream, fresh cilantro and onions (can also be prepared
vegan or gluten free).
***A classic Tuna Melt is the
sandwich special, complete with gooey sharp cheddar on sourdough.
***Chef Shetice channels the best of
Southern food traditions with Cornmeal Crusted Catfish, fried to
crispy deliciousness and served over lemon garlic grits with spicy blackened green beans and scallions.
***A Frenched Breast of Chicken (bone-in, with the wing
attached) is marinated, grilled, and served over drunken borracho beans with garlic
greens.
***The ultimate harbinger of spring
for many is the appearance of strawberries on menus all over town. Celebrate the warmer weather here at Buffalo
State with the Strawberry Walnut Salad, including romaine, red onion, asiago, fresh
strawberries and chickpeas, tossed with a creamy peppercorn dressing. Guests can also add grilled chicken or shrimp to this
salad.
